Citrus Rainbow Trout
There’s nothing as light and refreshing as a good filet of fish with a squeezed section of lime!
Place your rainbow trout on a baking tray and top with salt and pepper to season. Bake the rainbow trout filet in the oven for 15-20 minutes at 400F, then cut a lime into quarters and squeeze fresh lime juice onto the fish.
Serve with fresh vegetables or rice to fill out the dish without making it too heavy!
Spinach and Goat Cheese Pizza
Everyone loves a good pizza. But it doesn’t have to be swimming in pepperoni and tons of cheese to be delicious!
Top a thin crust with tomato sauce, some crumbled goat cheese, and lots of spinach. You can also add some lean ground chicken or turkey for protein. Then cook in the oven at 425F for 20 minutes.
Putting fresh greens on your pizza will make it a little more refreshing than your typical take-out.
Grilled Chicken Lettuce Wrap
The fastest way to take a dish and make it a little more refreshing is to replace the bread portion with leafy greens, and a lettuce wrap is a super flavourful way to do that.
Cook up some succulent chicken breast and slice it into strips, and it’s time to build your wrap. Lay out a large piece of romaine lettuce, then add some rice, bell peppers, jalapenos, shredded cheese – whatever you’d like to make it your own!
It’s a great healthy option for a weeknight dinner or barbecue.
Fish and Vegetable Skewers
Another great fish recipe you can cook up easily on the grill is a good skewer.
Grab a metal skewer and alternate inserting fish, lemon slices, and cubes of bell peppers. Once your skewers are filled with fish and vegetables, season with salt and pepper, and place on the grill.
Cook for about 10 minutes or until browned, rotating every few minutes.
