Trout Tartare
Want to impress your family this year? Start your Easter dinner off with a luscious trout tartare.
It’s a light appetiser that is perfect for spring. Next time you’re customising your NIKU Farms box, add some wildcaugh rainbow trout. Mix the trout with olive oil, salt, mustard powder, chives, and lemon juice, then put it in the fridge until cool.
Once the tartare is cold, use small moulds to plate, use a spoon to create a dip in the centre, then crack an egg and place the yolk inside. Serve with your choice of bread, et voila!
Honey Glazed Ham
A honey glazed ham is an inviting and elegant centrepiece for any family gettogether.
Add 100% honey to your next NIKU Farms order, and brush it over your pasture-raised black forest ham then cook slowly in your oven until cooked through.
Serve with honey mustard dipping sauce for a tangy bite, and offer a side of asparagus or broccoli.
Rack of Lamb
Looking for a showstopper dish? Grab a rack of lamb from our partner farm, Woolleys’ Lamb, or your favourite cut of lamb!
Coat the rack of lamb with rosemary, thyme, minced garlic, olive oil, and salt and pepper to season. Then put on your cooking tray fat side up, and cook for 30 minutes at 400F.
Serve your lamb with potatoes and peas, and watch your family swoon.
Potatoes au Gratin
If a cheesy side dish is what you want to complete your meal, potatoes au gratin are a delicious, creamy side that everyone will love.
Slice your potatoes into bite-sized pieces in a casserole dish, and mix with shredded marble cheddar, milk, butter, salt and pepper, as well as some sliced onions for flavour. You can also cut up some cooked pasture-raised bacon and mix that in for some added saltiness.
Bake in the oven for an hour at 400F, and enjoy!
Carrot Cake
If you’re looking for the best way to end your Easter dinner on a sweet note – why not go with a moist carrot cake?
It isn’t really Easter without carrots, and a good, spiced carrot cake (or carrot cupcakes) would be the perfect treat. Top your cake with cream cheese icing for a creamy, delicious finish.
