Cooking with Grass-Fed Lamb | NIKU Farms

When it comes to pasture-raised Ontario lamb, our partner farmers over at Woolleys’ Lamb know what they’re doing!

After seeing lambs grazing in orchards in New Zealand, owners Carrie Woolley and Brett Schuyler decided to bring that concept back to Canada. They let their livestock graze freely along their fruit trees, creating a sustainable farming practice that results in eco-friendly lamb that is raised on a 100% grass-fed diet.

The lamb burgers and lamb sausages over at Woolleys’ are definitely a customer favourite, but if you’re looking to cook up something a little different for your weeknight dinners, here’s some inspiration for your meals!

Rack of Lamb

For a succulent rack of lamb, marinate your ribs in olive oil, thyme, rosemary, and salt and pepper for as long as you like – we recommend leaving it marinating in the fridge overnight. 

Bring the lamb to room temperature, score the fat, and then cook at 400F for 20-30 minutes, or until it hits an internal temperature of 125F. 

Lamb Shoulder Roast

If you’re looking for a flavourful cut of lamb that’s easy to prepare, pick up the lamb shoulder roast and pull out the slow cooker.

Chop some carrots and onions to put in the base of your slow cooker, and add some rosemary, then place the roast on top. Season with salt and pepper, and then throw in some minced garlic. Use lamb bone broth and some red wine as your cooking liquid, then set to cook for the day! 

Chops and Steaks

You don’t want to overcook your lamb steaks or chops; it’s best enjoyed at a rare or medium rare cook. Season your cut of lamb with salt and pepper and pan sear for a couple of minutes per side, as well as a few seconds on the edges.

Serve with potatoes and your favourite vegetables for a flavourful meal your family will love!

Ground Lamb

The options of what to cook with ground lamb are endless. Try putting together lamb meatballs, lamb burgers, lamb wraps, Shepherd’s pie, or use it in a soup with lamb bone broth. Get as creative as you like!
