Irish Dishes for St. Patrick’s Day | NIKU Farms

March 7, 2022

Are you looking forward to cooking up some delicious St. Patrick’s Day meals next week?

It’s hard not to get excited about eating Irish comfort dishes with your family and friends – potatoes, stout beer, what’s not to love?

Whether you’re just cooking up an Irish dinner on March 17th, or having some friends over for a green beer and finger foods, we’ve got you covered.

Here are some ideas for your St. Patrick’s Day kitchen adventures!

A green casserole dish of Shepherd's pie with green peas and creamy mashed potatoes.

Beef & Guinness Pie

What’s more classically Irish than a pint of Guinness? Beef and Guinness pie!

Make your pie crust or buy pre-made if you like, then grab some NIKU Farms stewing beef. Cover the beef with a light coat of flour, along with salt and pepper to season. Add melted butter and cook the grass fed beef until browned.

Cook your onions and carrots, and add your meat, Guinness, and beef bone broth. Let the mixture simmer for about two hours on low heat. Then let it cool before adding to your pie crust and bake for thirty minutes.

Shepherd’s Pie

Looking to cook up a delicious Shepherd’s pie for St. Paddy’s? We got you covered!

Get some NIKU Farms pasture raised ground lamb, and cook with chopped onions until browned. Add your seasoning of salt and pepper, thyme, and rosemary, as well as minced garlic. Then mix in with beef bone broth, peas and carrots.

In a separate pot, chop up your potatoes and boil until soft, then mash. Stir in butter, garlic, and shredded cheese.

Take your casserole dish and layer in the meat and veggie mixture, then top with your garlic mashed potatoes. Cook in the oven on low until the potatoes turn golden brown.

Bacon Beer Cheese Dip

If you want to make a highly addictive, delicious party snack, you’ve got to try this bacon beer cheese dip.

Cook up your pasture raised bacon strips with finely chopped onions until the bacon is crispy. In a separate pot, mix dijon mustard, cream cheese, shredded cheddar, and your choice of beer. Once it’s all melted together, add in your bacon bits and bake until bubbly.

Your guests won’t be able to get enough!

Irish Nachos

Another great snack for your St. Patrick’s Day party is Irish nachos! Replace the tortilla chips with crispy sliced potatoes, and top with cooked corned beef, chopped green onion, shredded cheese, and serve with sour cream dip.
