Vegetable-Forward Omnivore Recipes | NIKU Farms

Even meat-eaters can be in the mood for a more veggie-forward meal! And veggie-forward doesn’t mean no meat at all – it just means that meat isn’t the centrepoint of the meal. 

At NIKU Farms, we show each customer the environmental impact they’re making by buying from local Ontario farms. If you’re the kind of customer who loves the environment as much as you love our pasture-raised meat, you know it’s good to utilize veggies in your dishes just as often as our grass-fed beef or chicken. 

Even leaning on vegetable heavy recipes a few meals a week will help to reduce your carbon footprint.

Here are a few ways you can highlight plant-based foods in your meals and still enjoy our pasture-raised meats!

Stuffed Bell Peppers

One of the best ways to highlight vegetables in a hearty meal is to stuff bell peppers! Cut the top off your peppers, scoop out the centre, then fill with ground beef, cheese, corn, onions – whatever you like! Then bake them in the oven until cooked.

Veggie pasta with meat sauce

Pasta is an incredible comfort food that can be a healthy vegetarian dish, or a quick and easy meal for omnivores!

Rather than using typical pasta, try making squash or zucchini spaghetti for a more veg-forward dinner, and then use ground grass-fed beef to make a bolognese to go on top!

Arugula salad with sliced steak

Of course, if you’re thinking vegetable-forward, you’re likely going to think of a salad. Why not take an arugula salad to the next level with some parmesan cheese and lemon dressing? Or make it a little sweeter and add strawberries, goat cheese, and a raspberry vinaigrette? 

Greens and bacon

We all know that bacon makes everything better, even vegetables! Grill or pan-fry your favourite green veggies such as green beans, brussels sprouts, asparagus, or zucchini, add some seasoning, and then add some sliced, pasture-raised bacon!
