Tacos are one of the easiest but most rewarding dishes we can think of. It’s simple, which means the quality of your ingredients needs to shine. What better place to get your sustainably raised rainbow trout than from the source itself? The folks at John O’s Foods have this delicious smoky aioli rainbow trout taco recipe that offers quite the kick with some sriracha chili sauce and zesty lime and lemon.
Ingredients:
1 ½ lbs NIKU Farms Rainbow Trout Fillet
Pack of Tortillas
2 cups of Arugula
1 Onion
1 Pepper
1 Tomatoes
1/2 cup of Mayonnaise
1/2 cup Sour Cream (or Greek Yogurt)
2 tbsp of Sriracha chili sauce
2 tbsp of olive oil
1 tbsp of Garlic powder
Parsley
1 Lime or Lemon
How to Cook
Step 1: Make the Spicy Aioli
Mix Sriracha chili sauce, greek yogurt, mayonnaise, garlic powder, half lemon or lime squeezed, and salt and pepper to taste. Mix in a bowl till combined.
TIP: If you’d like a little extra kick, try adding 1 teaspoon of smoked paprika to add some more dimension to your sauce.
Step 2: Prepare trimmings
Sauté sliced onions and peppers on low with oil until cooked through (around 10 min)
Slice tomatoes into thin strips, and place all trimmings and sauces in separate small bowls.
Wash your arugula and set aside.
Step 3: Warm Tortillas
Place tortillas wrapped in tinfoil in the oven at 350 degrees F and take out when warm. We prefer small corn tortillas!
Step 4: Prepare Fish
Place trout fillet skin side down on a baking sheet and sprinkle fish seasoning of your choice. Bake at 400 F for 10 minutes. Take out, remove skin, and place in a pan with olive oil to sear and break up into pieces on high heat for 1 minute. After your fish is broken up seared with some colour, turn off the heat and leave it in the pan to serve and keep warm while serving.
Step 4: Make your tacos! Start with fish on the button and begin building up, then garnish with parsley.
